Depending on the repairs the extraction could outstrip the ecology. It might require a non-renewable resource, it might require too much of a resource, etc.
Confused about the thoughts part. "Thoughts are sustainable" isn't what is written on the poster.

In terms of direct energy cost it may be low but secondary and tertiary costs of set up and distribution it seems to be high.
Higher than factory farming? No way. But that's also the reason fake meat looks friendly by comparison.
Higher than fishing in a river near where you live? I don't know. I'm doing research.

Turns out not eating soy makes eating a full RDA diet while vegan a bit more complicated. Not insurmountable, but perhaps more costly energy wise depending on where I live.

I've been ignoring the more complex and difficult costs to calculate

I probably should have added at the top the person in question only eats animals they personally fish or hunt. Only eat eggs from hens they raise.
There were lots of assumptions in your post about the classical version of who this person might be. Fair, assumptions, mind, but I figured I'd add that context.
