second: yeast bacteria are everywhere. you can't leave any biological matter lying around without it spontaneously starting to ferment
finally: yeast bacteria do stuff we couldn't possibly dream of doing
raw wheat corns are as far removed from a baked sourdough bread as water is from a rocket engine, but healthier!
