This quote actually summarises a fundamental misunderstanding the general public has about #science, where they think it is trying to SET the rules of the world, or that scientific knowledge is immutable.
Science, by design, acknowledges the limitations of its current models, and constantly strives to modify its models to fit the observed data. That's actually why science is such a powerful tool.

This paper from 2016 compared neural activity in individuals fluent in both a spoken and sign language.
